De Wetshof Sauvignon Blanc 2020
Wine has been made on the De Wetshof Wine Estate in the beautiful Roberson Wine Appellation. Patriarch Danie de Wet and his sons Johann [vineyards and marketing] and Peter [winemaker], are known as Chardonnay specialists. Other noble varieties flourish on the Estate and excellent wines are made from Cabernet Sauvignon, Pinot Noir, Riesling, and this fine Sauvignon Blanc.
Sauvignon Blanc grapes in the hands of the harvester
Once in the cellar, the grapes are destalked and then allowed from 6 to 10 hours of skin contact before being pressed. Once cool settled the wine is taken to stainless steel tanks for fermentation. The wine is then taken off the gross lees and allowed time in tank on the fine lees which builds up much character in the final product. It is then prepared for bottling.

Pour
From a Burgundy shaped bottle, closed with a screw cap. The label is classical elegant De Wetshof. In the glass, the wine is a pale hay colour with lime green flashes when held up to the light. The aromas are of a green herbaceousness, figs. On entry, there is a lovely soft line of acidity which runs through the minerally mid palate into a satisfying zippy ending so perfect with food. An impressive glass, though the wine will reward after a couple of years of cool cellaring.
Madeleine’s Summery Salad
Pair
The De Wetshof Sauvignon Blanc 2020 is an excellent sipping wine before a meal. Especially if the first course is a good match to the wine. A bright Summery Salad. Perhaps with a tranche of poached Norwegian Salmon, or a piece of mildly pickled fish.
