De Wetshof Cabernet Sauvignon 2020, perfect with a tranche of beef off the coals with a dab of herb butter…

De Wetshof Cabernet Sauvignon 2020

De Wetshof Wine Estate in the beautiful Robertson Wine Appellation is owned and operated by the De Wet Family. Danie de Wet, Patriarch and  Giant in the Wine Industry and leading Chardonnay producer has his sons, Johann and Peter in the business with him.

Johann, Danie and Peter De Wet

Peter, winemaker in the cellar, is not only maker of fine Chardonnays, but is a dab hand with other varieties. In particular this fine Cabernet Sauvignon, which displays elegance and muscle at the same time. Early morning harvesting is followed by destalking and crushing, and the mash is cold soaked for a few days before being taken to tanks to ferment dry. From there the wine is racked into French Oak Barrels especially selected by Christian Radoux, owner of the well-known eponymous Cooperage in Jonzac, France. After malolactic fermentation in barrel, the wine is racked into fresh barrels and allowed to mature there for 18 months. The wines are then blended and prepared for bottling.

The De Wetshof Barrel Cellar

Pour

From a Bordeaux shaped bottle, closed with natural cork. The label is classic De Wetshof, elegant and simple. In the glass, the wine is a deep bloodplum at the heart which pales out to a purple tinged ruby at the edges. The aromas are enticing. Blackcurrants, blue berries, ripe plums, graphite and the support of well applied oak. At entry there is a perfect acidity line going through to the long and gently waning aftertaste. The palate has punch, it is rich and generous, fabulous fruit, oak in support but in undertow. Plush, powerful, very exciting glass. This wine will reward hugely after a couple of years of cool cellaring. Truly impressive glass.

Just so delicious with this fine red wine

Pair

The De Wetshof Cabernet Sauvignon 2020 is an elegant sipper and the perfect after dinner bottle with share of dark chocolate. It is made for well prepared food. A tranche of  beef, cooked over coals and served with herb butter could not be more perfect.
