I have been following this website for some time, totally beguiled by the wonderful recipes and inventiveness of its owner, Astrid Field. Her recipes are so joy and happiness filled.

Her Raspberry Macarons with Whipped White Chocolate Ganache are little bites from Heaven and would be a lovely treat for St Valentine’s Day in the late afternoon while watching the sun going down with the Cap Classique below.

Simonsig Kaapse Vonkel Satin Nectar Rosé 2018, in its exciting new livery

The perfect wine for The Sweet Rebellion Macarons. Part of the Estate’s Kaapse Vonkel Cap Classique range it was launched in July 2019. This Demi-Sec Rosé Cap Classique is a blend of 76% Pinot Noir and 24% Pinotage. Made in the traditional Cap Classique style with a second fermentation in the bottle in which you buy it.

All the grapes are handpicked in bins. The whole bunches are gently pressed in pneumatic presses to collect the purest juice, named cuvée. The juice is then fermented in stainless steel tanks at about 14-16°C with specially selected yeast strains to ensure optimum fruit and freshness in the wine. This Cap Classique is bottle fermented and aged on the lees for 15 months prior to disgorgement.

Pour
From a Champagne shaped bottle in clear glass and closed with natural cork and the wire muzzle to hold the cork in place. The livery is elegant and worthy of the wine. In the glass, the wine is a bright dusty pink rose in colour. A mass of the tiniest bubbles rushing to the surface form a crown around the edges. The aromas are of fraises des bois, forest strawberries and red and blackcurrants. The palate is crisp from entry with pink apples providing a lovely line of acidity running through to the long aftertaste. There is a element of a fresh baked raspberry Danish with its beguiling baked year flavours. Officially referred to as Demi-Sec [half dry] it is a great sipping wine.
