One of the jewels in the Delaire Graff Crown, The Delaire Graff Cabernet Franc Rosé 2020 is made in the classic method of minimal skin contact in the tank with the skins. The other classic method is called saignée – or bleeding. Here the juice is taken off the fermenting grapes when it reaches the right colour. This leaves a greater ratio of skin to juice to make a full bodied red wine. Rosés vary in colour from the palest seashell pink, to a darker purple tinged wine. There is also Blanc de Noir, which is really a rosé, though it needs to fall within a colour specification, which is technically measured. Too dark, and it’s a rosé.
The grapes for the Delaire Graff Cabernet Franc Rosé 2020 came from vineyards on the estate and also from the Helderberg Mountain, and were hand harvested, early in the morning. The wine is made in the same way as Sauvignon Blanc. The grapes were gently pressed and then the juice cool settled out before fermentation took place. The wine also lay on the lees for a while after fermentation. All the lovely crisp and fresh notes maintained as the wine was prepared for bottling.
From a clear glass Burgundy shaped bottle, closed with a screwcap. The label is elegant and simple. In the glass, the wine is a beautiful cherry blossom pink, and gem bright. Very beguiling when the bottle was dewdrops on the outside. The aromas and the flavours are one with forest strawberries, blackcurrants and spun sugar. The wine is for now drinking
The Delaire Graff Cabernet Franc Rosé 2020 is the perfect sipping wine as a mid morning refresher or an aperitif. Good match with cold.
