De Wetshof Limestone Hill Chardonnay 2022, perfect partner for my Ceviche with Granadilla Dressing…

De Wetshof Limestone Hill Chardonnay 2022

De Wetshof Wine Estate was the first wine estate in the Robertson Wine Appellation to be so registered. The Estate has been owned and managed by the family since it was bought by Danie De Wet’s father in 1949.  Danie de Wet took the Estate to its stratospheric heights as the premier Chardonnay specialist in the winelands. Danie’s sons are both involved in the Estate, Johann as CEO who is responsible for the vineyards and the marketing and Peter who is the family winemaker. They also have some serious noble variety wines which are always well received and a true fingerprint of the estate and its terroir.

Johann, Danie, and Peter de Wet

I remember once doing a radio interview with Danie and having told him ahead that it will be four minute long, he spoke, almost without drawing breath for seven minutes. We had to do some truly judicious editing. The message came through loud and clear that Unwooded Chardonnay was on the way in, as the vines were now sufficiently mature to produce grapes of such quality that they could stand as wines on their own, untrammeled by oak.

Pour

From a Burgundy shaped vine leaf coloured bottle, closed with a screw cap. The livery is simple and elegant. In the glass, the wine is a pale hay colour with youthful flashes of lime green. Described by American Wine Critic, Robert Parker, who says, “The De Wetshof Limestone Hill Chardonnay never sees oak, and offers impeccably pure, refreshing apple, peach and lemon fruit, a lovely leesy richness of texture, and a nutty chalky, fruit filled finish of imposing length. Understated and less tropical than some of the better un-oaked Chardonnays, this wine possesses far better balance and sheer drinkability – not to mention finesse – than 99% of the world’s Chardonnay I have experienced.” I rest my case. A truly impressive glass.

My Ceviche With Granadilla Dressing

Pair

First of all, the De Wetshof Limestone Hill Chardonnay 2022 is a fabulous sipper. Chill it, but don’t make it too cold. As a food partner,  a well roasted organic chicken with the usual accompaniments is always a good choice. Ceviche, the Peruvian favourite is an excellent partner. Taken to Peru by Japanese settlers many years ago, Ceviche has become a hugely popular dish all over the world. My Ceviche with a granadilla dressing is a good one and if you CLICK HERE, you will have the recipe.
