The late Frans Malan of Simonsig Wine Estate in the Stellenbosch Wine Appellation, was a great pioneer and innovator. In the early 1970s, he started experimenting with using the traditional Champagne method of a second fermentation in the bottle. The wine became known and famous as Kaapse Vonkel. And the tradition carries on with his two sons Francois [Viticulturist] and Johan [Cellarmaster].
The style of wine is now called Méthode Cap Classique. Many other wineries now produce this style of wine with great success. There is a Cap Classique Association to which producers belong. It creates the legislation under which MCC can be produced.
Stellenbosch’s Simonsig Cuvée Royale 2014 is a Blanc de Blanc [white of white] as it is made only from Chardonnay.
