Fresh Fig, Shallot, Mozzarella & Hazelnut Summer Salad
The Zevenwacht 360º Sauvignon Blanc 2013 needs a punchy flavourful salad to accompany it for a perfect summer’s day lunch. Who better than Anna & Roberta Montali to give us a recipe?
Prepping & Cooking Time: 10 Minutes
What you’ll need…
40g fresh rocket
6 small figs, quartered
1 shallot, quartered
1 ball mozzarella, ripped into chunks
40g hazelnuts, toasted and chopped
fresh basil leaves
15ml (1 tbsp) balsamic vinegar
45ml (3 tbsp) olive oil
15ml (1 tbsp) fig preserve
Salt and freshly ground black pepper, to taste
What you’ll do…
Toss all of the salad ingredients and arrange on a serving bowl.
Mix the dressing ingredients well together and pour over the salad. Toss to combine season and serve.
