Nina Timm can always be called on to produce the perfect flavours to go with wines. When you are drinking a lovely crisp fresh Chardonnay like the La Bri 2014, you want a crisp and crunchy salad with all sorts of intriguing aromas and flavour.  The salad is perfect served with corn fritters

[above], chicken or fish.  Even a steak.

Easy Thai Salad
serves 4


3-4 cups grated carrots  – I like a coarse texture
1 small bunch spring onions – chopped
1 thumb size piece ginger – peeled and grated
2 cloves garlic – grated
1-2 green chilis – chopped
1 – 2 red chilis – chopped
125 ml toasted, salted cashew nuts – roughly chopped
a handful fresh coriander – roughly chopped
juice and zest or 1 or 2 limes – depending on size of limes
15 ml peanut butter – or more if you like
30 ml light soy sauce – or fish sauce if you have
5 – 10 ml sugar

Place all the grated and chopped vegetables in a mixing bowl. Add the nuts and coriander. In a separate bowl, mix the dressing ingredients and pour over the salad, just before eating.

PS: You will see my measurements are not exact. You have to taste and adjust to your palate.

The salad is delicious as a salad or lunchbox treat. It also works on corn fritters or any grilled fish or meat.
