De Wetshof Sauvignon Blanc 2022. The perfect match with Ina Paarman’s Grilled Calamari and Roasted Red Peppers…

De Wetshof Sauvignon Blanc 2022

De Wetshof Wine Estate was the first to be certified in the Robertson Wine Appellation. Owned and managed by the De Wet Family since 1949, wine has been made on the property for over 150 years. Danie De Wet is the Proprietor and Cellar Master and is assisted by his sons and co-owners, Johann who is responsible for Viticulture and Marketing, while Peter is the Winemaker.

Peter de Wet, the family Winemaker

While the family has a serious reputation for being Chardonnay Specialists, Peter works with other noble winemaking grapes, such as Pinot Noir, Cabernet Sauvignon, Riesling, and Sauvignon Blanc of which this on is a particularly fine example.

Sauvignon Blanc in harvester’s hands

Hand harvesting takes place early in the morning before the Summer heat rises in the vineyards. The choosing of harvest time is important as perfect ripeness for Johann and Peter is when the grapes have ripe fig flavours and soft acidity and a mélange of tropical fruits.

Once in the cellar the grapes are keep in an oxygen free environment to prevent oxidation and any of the wonderful flavours disappearing. Once destalked the grapes lie in the juice for 6 to10 hours. After pressing the juice is cool settled overnight and then it is racked off the settlings and taken to stainless steel tanks for cool fermentation. It is then taken off the gross lees and allowed to mature with the fine lees for a while. The wine is then prepared for bottling

Pour

From a Burgundy shaped bottle, closed with a crew cap. Simple elegant label. In the glass, the wine is a pale citrine in colour with flashes of lime green. The aromas are of tropical fruits with an undertow of ripe figs. On entry there is a lovely line of soft acidity running through to the aftertaste which wanes gently with a line of minerality persisting at the end. The plate is juice making, in great harmony and perfection as a food wine.
