Beef-and-Mushroom-Stew-With-Gremola-2-680x1024Nina Timm’s Beef Stew with Mushrooms & Gremolata

With the weather in the Cape heading towards winter instead of summer these last two days, time came for a robust beef stew, made without much without much effort, to go with a bottle of good wine.  This one, by Nina Timm, is packed with flavour and with the gremolata this stew is just over the top delicious.

Serves 6
Preparation Time 30 minutes
Cooking Time 3 hours

Ingredients
2kg boneless shin cut in big chunks
200ml flour
30ml ground coriander
15ml salt
15ml pepper
10 ml smoked paprika
45 ml olive oil
1 large onion chopped
250ml red wine
250 ml beef stock
125ml fresh thyme
80g tomato paste
10ml sugar
1 lemon juice only
400g mushrooms of your choice

Gremolata
zest of 1 lemon
125 ml chopped parsley
1 clove garlic

Instructions
Place the flour, salt, pepper, coriander and paprika in a plastic bag and toss the pieces of meat in the bag so that each cube of meat is covered in flour.
Remove meat from the bag and shake excess flour off.
Heat the olive oil in a big oven-proof pot and brown the meat in batches until it has a golden brown colour on the outside.
Remove the meat from the pot.
Add a little olive oil if necessary. Sauté the onions.
Add the meat, stock and red wine as well as the thyme.
Cover the pot with either a lid or foil and place in the oven for 2 1/2 hours.
Check halfway through the cooking process and if the pot seems dry, add more stock or water.
When the meat is fork-tender, stir in the tomato paste and sugar and lemon juice.
Add the mushrooms.
Place back in the oven for 30 minutes or until the stew is done.
Place the lemon zest, parsley and garlic in a food processor and chop finely.
Sprinkle the Gremolata over the stew just before serving.

Recipe Notes
Any stew always tastes better the next day if you can wait that long. Serve this beef stew with chunks of garlic bread.
