My Advent Calendar Wine #16, L’Ormarins Private Cuvee Cap Classique 2014
L’Ormarins Wine Estate is the home of Anthonij Rupert Wines. The Estate is situated at the entrance to the Franschhoek Valley. Named for Anthonij Rupert who was the first person to get L’Ormarins up and running in the latter part of last Century. When he passed on, he left behind designs for a range of premium Cap Classiques, one of which is the L’Ormarins Private Cuvée Cap Classique.
Zanie Viljoen, Anthonij Rupert Wines Winemaker
The larger part of the 66% Chardonnay and 36% Pinot Noir used in the blend comes from Altima Vineyards in the Elandskloof, a place of fine soils and steep valleys. Winemaker Zanie Viljoen and her team in the cellar gently whole bunch press the grapes. After cool settling, the finest juice, known as the Tête de Cuvée, the ‘head’ of the blend, is taken for fermentation. The best of the fermented wines are then blended and the wine goes into the bottle with a shot of yeast and sugar for the second fermentation. Once completed the wine lies on its lees in the bottle for 6 years, before being disgorged, the natural cork and the little wire muzzle and the labelling applied.
A fine pairing with little smoked salmon roses
