Boela Gerber, the Estate’s Winemaker, receives a blend of grapes from Floricius Beukes, the Estate’s Vineyardist and his tea. The final wine is made up of 63% Pinotage, 20% Pinot Noir, and 17% Chardonnay.
The grapes were hand harvested and whole bunch pressed, resulting in a dry and crisp base wine with a low alcohol and fresh acidity. After the first fermentation, the base wine spent 6 months on the lees in stainless steel tanks before racking and stabilisation. The second fermentation took place in the bottle and aged again for another 18 months on its lees. Each bottle was hand riddled, disgorged and corked.
From a classical Champagne shaped bottle in clear glass. Closed with natural cork and a wire muzzle. In the glass, the wine is a delicate cotton candy pink with a mass of tiny bubbles rushing to the surface and forming a crown around the edges. The aromas are of ripe red and black berry and tropical fruits. There is an undertow of fresh grated lemon rind and the lovey yeasty baked brioche. The palate is rich and generous, with the vibrant bubbles accentuating the flavours. Clean, dry aftertaste.
