Nina says: “Toasted Ham Cheese sandwiches can be with just plain old cheese and plain old ham and to me it would be absolutely perfect. You can however take your Toasted Ham Cheese Sandwiches up to another league.

For my Toasted Ham Sandwiches, I usually prefer strong white cheddar, but this time I wanted to indulge in the smoky, mouldy taste of the new Fairview Chèvre Roue. It is a mild 100% goats milk cheese. Covered in ash & a white bloomy dusting and is at this stage only available on the farm. With this gorgeous cheese, I thought a sweet smoky Gypsy Ham will be perfect and just to round this flavor bomb off, caramelized onions seemed like the perfect accompaniment.

Oh my gosh, my Toasted Ham Cheese Sandwich was out of this world. That oozing cheese will be hard to beat, so I’m afraid I will have to be very hungry to settle for just cheddar cheese.”

Toasted Ham Cheese Sandwich with Caramelized Onions
serves 2

Ingredients
2 large onions – cut into thin slices
15 ml olive oil
salt and pepper
20 ml sugar
a few sprigs fresh thyme
45 ml Olyfberg balsamic vinegar
4 slices sourdough bread – buttered on one side
1 Fairview Chèvre Roue
4 slices Gypsy Ham
butter for toasting
fresh rocket for serving

Method
Heat a pan and add the olive oil. Add the slices onions and saute with the salt, pepper and thyme until the onions are soft and light brown in color. Add the sugar and balsamic vinegar and keep stirring until the onions are a rich red color and slightly sticky. Place two of the slices bread on your work service, buttered sides up. Cut the cheese in slices and pack on both slices. Place two slices of ham on each slice of bread. Top with caramelized onions. place the other slices of bread on top, buttered side up.

Place the sandwich in a sandwich maker or panini machine and toast to golden perfection. Serve with fresh rocket and have serviettes ready for the oozing cheese.
