The Spier Noble Song range of wines is made free of Sulphur which until fairly recently was not considered possible. Global wine making trends and demand from customers has led to much innovation in the Cellars. Spier Cellar Master Johan Jordaan and Winemaker Heidi Deitstein have produced a fine range of ground breaking wines.
Tasting the Noble Song Range at Spier
The Cabernet Sauvignon Vineyard was planted 22 years ago on a vertical trellis system which allows for easy leaf canopy management. The vineyardists are able to manage controlled exposure to the sun and the slow development of the berries to deliver ripeness at lower sugar levels.
Once harvested, from selected vineyard blocks, the berries were hand sorted to ensure only the best went through for fermentation in Stainless Steel Tanks. Alcoholic and malolactic fermentation took place in French Oak Barrels. No Sulphur was used at any stage during the winemaking process.

From a Bordeaux Shaped Bottle, closed with a screw cap and with an elegant simple label. In the glass, the wine is a deep bloodplum red which pales out to ruby at the edges. The nose is pure Cabernet, black and blue berries – these segue on to the long palate with a satisfying aftertaste.
