The Estate offers a wonderful range of wines to suit every taste and pocket. There is both art and craft which goes into the making of a Cap Classique. Heidi Deitstein has as near as possible achieved perfection. The Spier Cap Classique Brut Rosé 2020 is a single vineyard wine from the Elgin Wine Appellation, which due to differing climatic and vineyard management conditions, each year is a fingerprint of the terroir and conditions prevailing that year.
Pinot Noir Grapes taking in a little sun
In the wine making process, Heidi used Pinot Noir grapes from one selected block. Once in the cellar, the grapes were hand sorted and whole bunch pressed. The juice was then fermented in a stainless-steel tank with a small percentage fermenting in previous fill French oak barrels. In the traditional course of events for a Cap Classique, the second fermentation took place in the Champagne shaped bottle with extended ageing on the lees for 14 months prior to disgorging, dosage and the application of the cork and the little wire muzzle which holds it in place.

From a brown Champagne shaped bottle, closed with natural cork, and the wire muzzle. The label is simple and elegant. In the glass the wine is a bright cherry blossom pink with a mass of bubbles rising to the top and creating a crown around the edges. The nose takes on the red berries and cherries of the Pinot Noir, pink apples. These are repeated on the palate with a gentle minerality, and a beautiful acidity running from entry through to the finesse and balance of the aftertaste. A delicious refreshing glass.
