Spier Wine Farm is a premier one stop Tourism and Wine destination in the Stellenbosch Wine Appellation. With Johan Jordaan in charge of the cellar, the winery makes use of grapes from other Appellations for its ranges of wines.
The farm has a collection of 21 Gables, the name for this range of wines. The Spier 21 Gables Sauvignon Blanc 2020 grapes come from the recently proclaimed Cape Town Wine Appellation. Cooling sea breezes moderate the Summer heat in the vineyards, giving the berries a longer hang time on the vine. This heightens phenolic concentration in the grape skins, ultimately enhancing flavour. With selective picking, only the best bunches were hand-harvested early in the morning. Once in the cellar, the grapes were cooled and the hand-sorting, de-stemming and crushing took place. Skin contact was limited to six hours and the free-run juice drained off to stainless steel tanks for cool fermentation. The wine matured for six months on the lees before being prepared for bottling.
From a Burgundy shaped bottle, closed with a screw cap. The livery is simple and elegant and in line with the other 21 Gables Wines. I the glass, the wine is a pale hay in colour, gem bright. The aromas tend more to the ‘green’ properties of Sauvignon Blanc. Aromas of fresh cut grass, rubbed fig leaves and granadilla. The palate is green apple crisp and fresh from entry with a lovely line of citrus acidity through into the aftertaste. The rich and generous concentration and texture, make this a truly special glass. Eminently drinkable now, though we know that a couple of years of cool cellaring will reward you.
The Spier 21 Gables Sauvignon Blanc 2020 is the perfect sipper and aperitif. Excellent with crisp summery salads, asparagus, and fennel as ingredients.
