Groenvlei Farm, the home of Peter Falke Wines is situated in the Stellenbosch Wine Appellation at the foot of the Helderberg Mountains, one of the unique parts of the region. False Bay, close by and it cooling breezes ameliorate the summer heat in the vineyards. The Peter Falke Signature Noelina Méthode Cap Classique 2015 is made in the classical style of a Blanc de Blanc Champagne made only from Chardonnay, with a second fermentation in the bottle.
From a classical Champagne bottle, closed with natural cork and a wire muzzle. The label is elegant Peter Falke, simple and very pleasing. In the glass the wine is a pale golden straw in colour with masses of the tiniest bubbles rising to the surface and creating a crown around the edges. The aromas are fynbos herbaceous and citrus, with the usual fresh yeast whiffs of fresh baled almond brioche. Granny Smith apples providing a crisp freshness on the generous palate ad to the long aftertaste.
Don’t save it for a special occasion, it is a great lift at the end of the working day with a plate of simple seafood pasta. Smoked salmon and oysters are traditional with this style of wine. To watch the sun go down with a flute of this sublime wine and some plump green olives is something very special.
