The market niche of Non-Alcoholic or De-Alcoholised wines is growing rapidly, I am told. White, Red and Rosé Wines are all available with no alcohol, making it easier for the designated driver to drink and also for those who love wine but can’t take the alcohol, or those who for medical reasons, have temporarily stopped drinking alcohol.
Into the gap marches Allure, a classic in every way. Made from the two traditional Champagne varieties, Pinot Noir and Chardonnay. The base wine is made in exactly the same way as a Cap Classique. Then instead of a second fermentation in the bottle, the wine is carbonated during the bottling process. In winemaking terms this is referred to as CO2 sparging.
