The de Villiers Family are now into their fifth Paul as Cellarmaster since taking ownership of the Landskroon Estate on the slopes of the iconic Paarl Mountain. The Estate looks out south to Table Mountain on the horizon. It is on these slopes that the grapes for the Landskroon Cabernet Sauvignon 2015 are grown.
After harvesting, the grapes were brought to the cellar and destalked. Fermentation took place in open fermentation tanks with regular punch downs to gently extract the colours and tannins. Once fermented dry the wine was taken to French Oak Barrels, 5% new barrels and the balance 2nd, 3rd and 4th fill barrels. This is to allow the fruit to shine and the oak to be a support in flavour. The wine was then prepared for bottling.
It looks like
Bottled under natural cork closure in a Bordeaux shaped bottle. In the glass, the colour is a gem bright dark plum at the core which pales out to ruby at the meniscus.
It smells like
Berries and cherries which follow through on the palate. Classical blackcurrants and cedar spice.
It tastes like
While the wine is full bodied, the flavours are dark berries, plums. The cashmere clad tannins are well interwoven with the subtle oak, entry to tail acidity and the rich fruit.
It’s good with
Perfect glass on its own. Excellent as a food partner. Chill it for about 30 minutes before service to enhance the experience. Landskroon produces an award-winning Port. Figs are just coming into season. Ina Paarman’s Chicken with Port and Figs is a great partner. Try and use an organic Chicken, the flavours are better. Click here for her recipe.
