De Wetshof Wines, in the Robertson Wine Appellation, was founded in 1949 when the farm was purchased by Patriarch Danie De Wet’s father, Johann. The family specialises in the production of Chardonnay. Now working with his two sons, Johann as CEO and Peter as Winemaker, Danie has introduced other noble varieties, Cabernet Sauvignon, Riesling, Sauvignon Blanc, and Pinot Noir amongst them.

The De Wetshof Bon Vallon 2022 is one of the two unwooded Chardonnays which emanate from the farm, the other being the Limestone Hill. Bon Vallon was purchased by Danie when he started farming on De Wetshof.
Chardonnay ripening on the vine
The Chardonnay grapes for this wine were harvested in the cool of dawn on Bon Vallon. Once destemmed and pressed, the juice was taken to stainless steel tanks for cool overnight settling. The juice was then racked off the settlings and taken for fermentation. Once completed, the wine was left on its lees during which time regular stirring takes place to add greater flavour to the final wine. The wine is then prepared for bottling.

Pair
While the De Wetshof Bon Vallon 2022 is eminently drinkable on its own, like most fine Chardonnays, it is a perfect match for food. It has enough oomph to partner a roast belly of pork or a light Vegetable Curry. Dianne Bibby has an excellent Saffron Honey Chicken Casserole, which goes so well with his wine.
