Darling Cellars Cap Classiques
Darling Cellars is situated in the Darling Wine Appellation. An interesting area, climatically. While the countryside is covered in indigenous fynbos the region is governed by the Atlantic Ocean. The Benguela Current which runs up our west coast has its origins in the deep icy waters in the South Atlantic. Gentle cooling breezes off this current ameliorate Summer heat in the vineyards of Darling. The Darling Cap Classiques have recently undergone a new label design, making them modern, appealing, and elegant.
Darling Cellars Cap Classique Blanc de Blanc Brut 2020
Blanc de Blanc is French for ‘white of white’ which means, in the case of this wine, that it is made solely form Chardonnay. After the silent pop of the cork, and once poured, the wine is a beautiful, pale straw in colour. There is a mass of tiny bubbles rushing to the surface. The aromas are of lemon and lime, and granny Smith apples. Entry is to a full and exciting palate which has delicious, toasted buttery brioche flavours and a log and gently waning aftertaste.
Darling Cellars Cap Classique Brut Rosé 2019
Here is an exciting and very different Rosé, made from Grenache Noir. In the glass, the wine is a beautiful salmon pink in colour, with the expected tiny bubbles rushing to the top and forming a little crown around the edges. The aromas are of watermelon, spun sugar, pomegranate arils, and fraises des bois. These all segue on to the palate in a wine which has a zippy acidity line and a delicious dry aftertaste. Great food wine
Darling Cellars Cap Classique Nectar 2019
Interesting Cap Classique made from Chenin Blanc, South Africa’s most widely planted grape. A perfect grape for a Cap Classique. In the glass, the wine is a pale honey in colour, again with the tiniest bubbles going helter skelter to the surface. The aromas are of ripe crisp apples, desiccated pineapple with a healthy presence of lemon and lime rind. You’ll find fresh baked shortbread on the palate, a lovely line of acidity running through from entry to the aftertaste where you will get a little Chenin Blanc sweetness.
