Advent Calendar #20 Cellaro Nero d’Avola Nerello Mascalese Due Lune 2019
The wines of Sicily are renowned, having grown up on the black volcanic soils produced by Mount Etna. The Cellaro Nero d’Avola Nerello Mascalese Due Lune 2019 is a blend of two wine grapes mentioned in the name. Nero d’Avola being one of Sicily’s fabled grapes and Nerello Mascalese which grow primarily of the slopes of Mount Etna.]
The Cellaro Winery is situated in Sambuca di Sicilia (Agrigento) in the South-West part of the island of Sicily, Italy. The estate is renowned throughout Sicily and stands out as a true specialist for native grapes such as Nerello Mascalese, Nerello Capuccio, Grillo and Nero d’Avola.
Nerello Mascalese being harvested by hand
To produce the Due Lune Nero d’Avola Nerello Mascalese, the Cantine Cellaro cut 10 cm on the vine before the bunch itself when they reach maturity, Natural desiccation begins under the warm Sicilian sun and the warm winds blowing across from Africa. When a weight reduction of 15-20% has been obtained, the grapes are harvested, pressed and fermentation begins in contact with the skins. After a very long maceration, the wine is racked into French and American oak barrels where it rests for about six months. The Wine is then prepared for bottling.
