Stellenzicht Acheulean Chardonnay 2020
Stellenzicht is a premier Wine Estate situated on the slopes of the Helderberg Mountains in the Stellenbosch Wine Appellation. Known as th Golden Triangle, this part of the Helderberg has the benefit of great soils, mainly decomposed granite AND cooling breezes from close by False Bay which ameliorate the Summer heat in the vineyards and allow for a longer hang time for the bunches.
Handmade Stone Ax
Acheulean refers to a stone age industry of the making of handmade stone tools.
L’Re Hughes, Winemaker, & Radio Personality Guy McDonald with an Amphora
The grapes are hand harvested in the early morning to retain as much of the aromas and flavours as possible. Once in the cellar, Stellenzicht Winemaker L’Ré Hughes and her cellar team whole bunch press the grapes and the juice is cold settled in stainless steel tanks. Cool clear juice is racked off into both Amphorae and 500 litre French Oak Barrels. Batonnage takes place in the first two weeks of fermentation. Once fermented, the barrels and Amphorae are topped up and sealed and left on the lees for a year. A final blend takes place before the wine is prepared for bottling.
