Spier Seaward Sauvignon Blanc 2021
Spier Wine Farm is a complete tourist destination in the Stellenbosch Wine Appellation. You could happily spend a day there with all that is on offer. In fact, you could overnight in the Spier Hotel if you need extra time.
Cleverly named this range, all the vineyard are marine where they are affected by cooling breezes off the sea to ameliorate summer heat in the vineyards. The vineyard are also specially trellised to allow for quick efficient harvesting by machine. This takes place very early in the morning before the summer heat rises in the vineyards.

Once in the cellar, the grapes are destemmed and crushed and then allowed four hours f skin contact. The free run juice is then use for the fermentation process which takes place in stainless steel tanks. After fermentation the wine spent three months on the lees before being prepared for bottling.

From a Burgundy shaped bottle, closed with a screw cap. In the glass, the wine is a pale honey in colour. The aromas, of ripe green figs, tropical fruit and an undertow of fynbos herbaceousness all segue onto the palate where from entry there is a lovely line of acidity in a rich palate with a long ending. An impressive glass.
