The Vadas Smokehouse and Bakery on the farm is operated by PJ and Tara Vadas whose fabled bakes and food off the menu, out of the smoker, are on offer in their restaurant on the Werf. Vegetarians will be happy with the menu.
Tania Kleintjes, Spier’s Organic Wine Specialist
Spier is renowned for its wine and has been going as long as I can remember. Today, the Cellar Master is Johan Jordan who has a number of winemakers in his care, each with their own speciality. For the Spier Good Natured range, Tania Kleintjes is the Organic Specialist on the Estate. This range of wines is utterly delicious, I have tasted them all.
Flambéed Chorizo Sausage
Perfect with a platter of charcuterie or a flambéed Chorizo Sausage. Simply pour a couple of tablespoons of warm brandy over the sausage and let it burn off the alcohol. The skin will crisp up and there will be a touch of sauce in the pan.
