The wonderful collection of Cape Dutch Style Buildings on the Estate have between them 21 Gables,  some in very simple design and others more scrolled and florid. Appropriate they the Farm should name one of its premier wine ranges after the 21 Gables.

Chenin Blanc ripening on the vine

The 36 year old dry land semi trellised vineyard from whence cometh the Chenin Blanc grapes for the Spier 21 Gables Chenin Blanc 2019 is planted in the high hills of the Tygerberg. The soils are old geological formations, in the main Malmesbury Shale. Cooled by Ocean breezes from the cold Benguela Current which runs in the Atlantic Ocean up the west coast of the country. Picked in four parcels in different stages of ideal ripeness, the vines offered an even handed 8 tons per hectare. The grapes were hand harvested into 10 kg lugs and then chilled before the wine making process started. They were hand-sorted, destemmed0 and crushed. This was followed by skin contact for 6 hours. The free-run juice was drained off to settle overnight before fermentation took place in a combination of 300L, 400L, 500L and 2500L tight-grain French-oak barrels. The wine matured for 14 months in these barrels; 60% were new, while the balance was second fill. The wine was then prepared for bottling.

From a Burgundy shaped bottle, closed with a screw cap. The label is suitable simple and elegant. In the glass, the wine is pale citrine at the heart which pales out to a hay colour at the edges. The aromas are of soft dried Turkish apricots, desiccated pineapple and tropical fruits like mango and melon. There is an undertow of white flowers and honey. The rich and generous palate, from entry has a line of sweet tropical lime acidity which runs through the mid palate of white fleshed peaches, yellow  apple and creamy marzipan and into the long and gently waning aftertaste. A truly impressive glass, so eminently drinkable now. With a couple of years of cool cellaring, the wine will reward.
