Spier 21 Gables Cabernet Sauvignon 2016

Spier Wine Farm in the Stellenbosch Wine Appellation is noted for a wonderful collection of Cape Dutch Style Buildings and the genre is known for the Gables which are held up with buttresses and strengthen the building. Cement craftsmen produced the gable and they were almost left as a signature of his work. Spier is blessed with 21Gables and produce a range of premium wines under that label.

The vineyards which are the source for the grapes grow decomposed granite soils on the west-north westerly-facing slope of the majestic Helderberg mountain, on the southern side of Stellenbosch. The soils have a clay subsoil which means they are excellent at retaining moisture. The cool breezes off False Bay ameliorate the Summer heat in the vineyards which allows a slower ripening allowing the grapes to develop colour and flavour. Once in the cellar after hand harvesting, the grapes are destemmed and then sorted to be certain that only the best coloured and sized fruit go through to the winemaking process. The fermentation took place in stainless-steel fermenters for a period of 24 days. This was followed by a 26 month period of maturation in French Oak Barrels of which 70% were new. Barrels were selected and blended and the wine prepared for bottling.

A feast at Spier

From a heavy broad shouldered Bordeaux shaped bottle, closed with natural cork. The label is elegant, and the bottle has the Spier logo in white imprinted below the label. In the glass, the wine is a deep bloodplum red at the heart which pale out to ruby at the edges. Aromas are of Parma violets, blackcurrants and roadside brambles. The palate from entry is almost an essence of black berries and cherries, lovely line of fresh acidity running through to the long and lingering aftertaste. Full bodied. An impressive wine at four years old. Eminently drinkable now, though will reward you after a couple of years of cool cellaring.
