To go with an Italian wine, who better to ask for a matching recipe that Anna & Roberta Montali, the Jozi mother and daughter team who ooze Mediterranean food – packed with colour, aroma and flavour. Does one get more Italian than this?
Prepping And Cooking Time: 30 minutes plus rising time
240g (2 cups) cake flour
pinch of salt
10ml (2 tsp) olive oil
150ml lukewarm water
10g instant yeast
10ml (2 tsp) semolina
6 slices prosciutto
50g gorgonzola, crumbled
1 tomato, cut into wedges
handful of baby rocket
15ml (1 tbsp) olive oil
salt and freshly ground black pepper, to taste
To make the dough, put the flour and salt in a mixing bowl and stir to combine. Make a well in the centre and pour in the oil and lukewarm water and with your hands mix to combine. Knead for a few seconds then form into a ball. Place the ball in a large oiled bowl and cover. Leave in a warm place until doubled in size. Preheat the oven to 220°C and lightly oil a baking tray.
Spread the dough out and press down to as thin as it goes. Leave to rest for 10 minutes.
Sprinkle with the semolina and press down again and bake until golden, for about 10 minutes.
Top with the prosciutto, gorgonzola, tomato and rocket. Drizzle with the oil and season. Serve while still hot.
