Peter Falke Chardonnay 2015 & Hein van Tonder’s Sardine & Fennel Pasta – 24.01.2017

Peter Falke Chardonnay 2015

Groenvlei Farm, hugging the foothills of the Helderberg Mountains in the Stellenbosch Wine Appellation is the home of Peter Falke Wines. Perfect situation for wine grape growing with the cooling breezes coming up in the late afternoon off False Bay which ameliorate the heat of summer afternoons.

Chardonnay grapes ripening on the vine

The Peter Falke Chardonnay 2015 is in every way a classic.  The GM and Winemaker, Werner Schrenk takes great care of the vines.  When harvest time comes, special attention is given to the early morning harvested bunches with selection in the vineyard to make sure that only healthy bunches go through to the cellar.  Further berry sorting takes place ensuring that only the finest grapes go through to the winemaking process. The juice was inoculated and spent 12 months in 225 litre third fill barrels. During this time the barrels were either rolled or batonnage took place to ensure that the lees were suspended which adds more creaminess and mid palate flavour to the wine. The wine was then prepared for bottling.

It looks like
Appropriately bottled in a Burgundy shaped bottle under cork. The simple Peter Falke livery gives elegance to the bottle. In the glass the wine is a pale golden straw, gem bright.

It smells like
Ripe white fleshed peaches, undertones of granadilla, sweet tropical limes and oak spice.

It tastes like
Good ripe fruit follows on after the aromas, filling the palate with a rich creamy wine which passes on to a gently waning aftertaste.  Harmony of all the components is a feature.

Hein van Tonder’s Sardine & Fennel Pasta

It’s good with
The oak regime reveals itself as gentle, the wine is a serious sipper rather than a quaffer.  It is a good food wine and calls out for a butter roasted organic chicken, roast pork belly with crispy crackling, or a vegetarian dish with goat’s cheese.  As a midweek supper, Hein van Tonder’s Sardine and Fennel Pasta is a dream partner for this wine.  Click here for Hein’s recipe.
