Jane Anne Hobbs’s Tomato, Mozzarella & Chorizo Salad with Caperberries & Basil

Jane-Anne Hobbs operates one of the country’s most successful food websites. She is a great food innovator and has some great food ideas. Her cookery book Scrumptious is not only beautiful to look at but packed with some truly lovely recipes. She will tackle food Holy Grails and make the dishes her own, as she has done with a Caprese Salad and given it a new name so there is no confusion or imitation of the original. Perfect wine for this dish is the Haute Cabrière Chardonnay Pinot Noir 2019.

It seems hard to believe that this sublime wine has been around for 26 years, since its launch by Achim von Arnim, during which time it has become a legend. It was the first wine of this style to be produced in South Africa. Using the two classic varieties from Champagne and Burgundy, Chardonnay and Pinot Noir. The tradition continues under his son, Takuan, who himself is quite an innovator.

Haute Cabrière Chardonnay Pinot Noir 2019

The grapes  for the Haute Cabrière Chardonnay Pinot Noir 2019 are a blend of 77% Chardonnay and the balance Pinot Noir, both grown on the slopes of the mountains on the Eastern side of the Franschhoek Wine Appellation. In the cellar, the same techniques as producing a white wine are used and the wines vinified separately and then blended before bottling. The wine has not had time in French Oak Barrels, to maintain the lovely crisp nature. The Chardonnay adds the freshness and finesse to the blend while the Pinot Noir plumps it out and supports the Chardonnay.

From a Burgundy shaped bottle, closed with a screw cap. The label is classic Haute Cabrière, simple elegant. The colour in the glass is pale golden straw and gem bright. The aromas and palate run one into the other. A tsunami of citrus, white fleshed peaches and an undertow ow red berries from the Pinot Noir content. The acidity is crisp and fresh in a generous and rich mid palate going into a long aftertaste. An utterly delicious glass.
