I spoke to Arek Witaszek, Asara’s Head Chef after I had a taste of the dish last week when we spent a couple of nights in the Asara Luxury Hotel. He really is able to make magic happen in the kitchen, and in my opinion underrated as a chef. It was so tender, you could have cut it with a soup spoon. Or as my mother used to say, ‘tender as a mother’s parting words.’
