My Advent Calendar #4 is from Cabernet Sauvignon grapes from 10-year-old vines grown on the estate on a variety of soils made up of decomposed high mineral granite Oakleaf soil, with Glenrosa and Tukulu sub soil. Outcrops of granite, chameleon-like change colour in the day as the sun moves across.
From a Bordeaux shaped bottle with a natural cork closure. Elegant black label. In the glass, it is a deep plum at the core which goes to purple garnet at the edges. If you like young juicy fruity Cabernet, which I do, and if you like wine which has been matured in high toast oak giving it wonderful mocha-chocolate flavours, which I do, chilled this is a delicious juicy sappy wine. Berried coffee aromas on the nose. On the palate there are blackcurrants, a touch of good coffee, undertow of oak and a real berry cherry fruit filling the palate. Gentle tannins interwoven with the fruit, the acidity and the oak in a long and gently waning aftertaste.
Great with a chocolate dessert! An excellent fun glass on its own. It will happily take on a steak which has been rubbed with fine ground coffee and then braaied. Seared tuna and pork belly with crispy crackling.
