While it has all the modern technology in the vineyards and the cellar, it must be remembered that Zevenwacht Wine Estate has a history going back over 300 years. The family of Denise Johnson, the Chatelaine, owns and manages the Estate. The Zevenwacht Shiraz 2017 is made from grapes from the Stellenbosch Wine Appellation.
Zevenwacht Wine Estate, situated on the beautiful Stellenbosch Wine Route is a modern wine farm with a 300-year history. The Johnson Family, has a strong commitment to historic and cultural preservation as well as conservation of the surrounding indigenous environment. The grapes for this wine come from the home vineyard on the Estate’s panoramic 450-hectare maritime climate sitting on the Bottelary Hills looking down on False Bay. Cooling on shore breezes ameliorate the summer heat in the vineyards, which allows for longer hang time. This results in great aromas and colour, great fruit concentration, pip ripeness, and soft tannins in the final wine and at harvesting time.
The trellised vineyards face the south west and yield up an even handed 6 to 8 tons per hectare. Once in the cellar the grapes are destalked, crushed and fermentation takes place. Pump overs took place regularly to ensure gentle and even extraction. Once the fermentation process was over the wine was racked off into French oak barrels, 500 litres in size, and matured for 14 months. It was then prepared for bottling.
From a Burgundy shaped bottle, closed with natural cork. The label is Zevenwacht elegant with white gold and red lettering. In the glass, the wine announces its breadth and depth with a deep bloodplum at the heart which pales out to purple tinged ruby at the edges. The aromas and the flavours run from one to the other and are of black and red berry and stone fruits. Roadside brambles, mulberries and fraises des bois. There is the expected and rather charming little grind of white pepper. Lively fruit acidity, soft tannins and a long and gently waning aftertaste with its dry pepper, oak and plum. Truly delicious bottle of wine. The Zevenwacht Shiraz 2016 has all the attributes of a wine which will reward greatly if you give it a couple of years of cool cellaring.
