Zevenwacht 7even Sauvignon Blanc 2016 & Anina Meyer’s Tabbouleh Quinoa Salad – 30.12.2016

Zevenwacht 7even Sauvignon Blanc 2016

The Zevenwacht 7even Sauvignon Blanc 2016 is part of a range of modern fruit driven lifestyle wines produced on the estate.

Denise Johnson, Chatelaine of Zevenwacht

Zevenwacht Wine Estate is owned and managed by the Johnson Family, which has a strong commitment to historic and cultural preservation as well as conservation of the surrounding indigenous environment. The home vineyard on the Estate’s panoramic 450 hectare maritime influenced property, supplies the majority of the grapes.  The farm Zevenrivieren, situated at the crest of the Helshoogte Pass and also in the Stellenbosch Wine Appellation, provides winemaker, Jacques Viljoen, with a boutique selection of grapes that add to the fascinating variety of the wines.

The grapes, 95% Sauvignon Blanc, 5% Semillon, for this wine are from vineyards predominantly facing in a South Westerly direction.   These slopes overlook False Bay, Cape Point and Table Mountain and enjoy the benefit of the cooling sea breeze, whilst getting good sunlight exposure to ensure optimal fruit ripeness.

Sauvignon Blanc ripening on the vine

The grapes were fermented in stainless steel tanks at cool temperatures to enhance tropical fruit ester production.   Each component was stirred on its gross lees on a weekly basis for the first four months after which it was racked, blended and stabilized and prepared for bottling. Once bottled it is perfect for early drinking and should be enjoyed within 2 years of vintage.

It looks like
Bottled under screw cap in a Bordeaux shape bottle. The label is a large 7 made up of the flavours aromas and tastes of a Sauvignon Blanc. In the glass it is gem bright with green flashes.

It smells like
Green plums, starfruit, fynbos herbiage.

It tastes like
Elegant fruit forward from entry. Spritzy and refreshing.  Good palate weight, very more-ish. Good sweet tropical lime ending in a dry finish.

It’s good with
A wine like this is so refreshing, it’s just perfect as a glass on its own. Serve really cold. The 7 Sauvignon Blanc 2016 is a great foil for Anina Meyer’s Tabbouleh Quinoa Salad.  Click here for her recipe.
