When looking for a dish to match the Steenberg Semillon 2013, I wanted something that looked as though I had taken a bit of trouble in the kitchen, that gave the surprise when you pulled back the foil cover, and was packed with flavour to go with this packed with flavour wine. I needed to look no further than these two wonderful kitchen magic makers.
Prepping And Cooking Time: 50 minutes
2 snappers, cleaned
30ml (2 tbsp) olive oil
Zest and juice of 1 lemon
30ml (2 tbsp) fresh flat-leaf parsley, finely chopped
15ml (1 tbsp) fresh thyme, chopped
Salt and freshly ground black pepper, to taste
Preheat the oven to 180°C.
Place each snapper on an individual piece of foil and drizzle with the oil and rub in the rest of the ingredients.
Seal the foil and bake until cooked, for about 40 minutes.
Remove and serve with boiled potatoes or fresh green salad.
