, Michael’s Baked Marrows with Tomato & Parmesan

Willow Creek Olives and Olive Oils are the product of the beautiful Nuy Valley the turnoff for which is on the national road between Worcester and Robertson.

The oils, of which there is a wide award winning selection, also come infused with various flavours such as garlic, jalapeno parmesan and more.

For this recipe, I have used the Willow Creek Garlic Infused Olive Oil as the dish is Mediterranean in style.

Michael’s Baked Marrows with Tomato & Parmesan

You’ll need
1 kg

[3] large marrows
sea salt and freshly ground black pepper
Willow Creek Garlic Infused Extra Virgin Olive Oil
400g homemade tomato & onion sauce [you can use Ina Paarman’s Pasta Sauce] 100g finely grated Parmigiano Reggiano, Grana Padano or Italian style hard cheese

What you’ll do
Preset the oven on 190C.  Cut the marrow in half lengthwise, in half lengthwise again and then cut each into four pieces.  Place in a colander and salt well.  Allow to draw liquid for 30 minutes, or an hour if you have time.  Wash under running water and pack into an oven proof dish in a single layer.  Season well and splash generously with the Willow Creek Garlic Infused Extra Virgin Olive Oil. Cover with the tomato sauce and bake for 30 minutes or until the marrows are cooked.  Sprinkle with the grated cheese and return to the oven, put on the fan and watch carefully.  Allow the cheese to melt and the sauce to start bubbling.  Serve with a meat course or a part of a vegetarian meal.
