Never have to search too deeply into Anna & Roberta Montali’s Recipe Collection to find the perfect dish to go with a wine, Their usual lusty flavours are perfectly matched with this lusty Rosé.
Prepping & Cooking Time: 40 minutes
45ml (3 tbsp) olive oil
800g prawns, cleaned and shelled
60ml (¼ cup) vodka
400ml fresh cream
30ml (2 tbsp) tomato paste
Salt and freshly ground black pepper, to taste
45ml (3 tbsp) fresh flat-leaf parsley, finely chopped
400g squid ink pasta
Zest of 1 lemon, to serve
To make the sauce, heat the oil in a large deep frying pan and sauté the prawns for a few minutes until they turn pink.
Pour in the vodka and leave to cook until the alcohol has evaporated.
Add the cream and tomato paste and cook stirring until it is a little thick. Season.
Cook the pasta in plenty of salted boiling water until al dente. Drain.
Serve the pasta tossed in the sauce and topped with the parsley and lemon zest.
