It is common knowledge that Frans Malan was a great pioneer in the wine industry in the second half of the last century.  He tackled the Champagne style of wine in 1971 when he used imported riddling racks from Champagne and Chenin Blanc as his grape.  And he won. And he named it Kaapse Vonkel – Cape Sparkle.

Simonsig Kaapse Vonkel Brut 2015 is the successor of those early experiments, with Frans & Liza Malan’s two sons now providing the expertise.  Francois, the vineyard specialist and his team grow the Chardonny 48%, Pinot Noir 49% and Pinot Meunier 3%.  Pinot Meunier is known as the second black grape of Champagne.

Johan Malan ensures that the winemaking process is a classical one with the grapes harvested by hand into small bins.  The whole bunches are pressed and then cold settled for 2 days before being taken though to stainless steel tanks for fermentation. Johan took a component of the Chardonnay to prefilled French oak barrels in order to add to the breadth of the wine.  Malolactic fermentation did not take place in order to maintain the freshness of the final product.

Once the base wine was fermented, the components were blended and the wine bottled in a traditional Champagne shaped bottle.  A shot of special yeast and sugar is added before the application of the crown closure.  The second fermentation forces the released carbon dioxide back into the wine.  After disgorgement, the cork closure is applied and the wire muzzle.

It looks like
Beautiful and elegantly packaged with very pleasing livery.  In the glass is a delicate pale straw with masses of the tiniest bubbles rushing to the top of the glass and forming a crown around the rim.

It smells like
Sliced Granny Smith apples, ripe white fleshed peaches and fresh baked brioche.

It tastes like
A joy of bubbles packed with citrus, apples and a sublime acidity. Quite simply a stunner.

It’s good with
Good Methóde Cap Classique is an any time wine and not one to be kept only for ‘that special occasion.’  It is wonderful on its own as a mid morning refresher, an aperitif before a meal and a mood lifter afterwards.
