12 small or 6 large organic potatoes
3 shallots
6 garlic cloves, skin on
Glug of NoMU Extra Virgin Olive Oil
8 pork sausages
1 tsp NoMU Roast Rub or One for All Rub
NoMU Sea Salt
NoMU Black Pepper
Handful of fresh herbs such as sage, thyme or rosemary (optional)

Preheat the oven to 180°C.

Halve or quarter the potatoes. I prefer to leave the skin on for extra flavour and nutrition, but feel free to peel them. Parboil them in salted water until just cooked but still firm. Drain really well in a colander and allow the steam to evaporate. Tip into a roasting tray.

While the potatoes are boiling, peel the shallots (keeping the root section intact), halve them and slice into thin boats/wedges. Lightly bash the garlic cloves with the flat side of the knife and add to the potatoes, along with the shallots. Slice the sausages in half diagonally and add to the roasting dish. Drizzle generously with olive oil, season with Roast Rub, salt and pepper, then toss everything really well to coat evenly with oil and seasoning. Roast in the oven for 30-40 minutes or until beautifully browned and caramelised. If you want to add a handful of fresh herbs, only do so in the last 10 minutes of cooking so that they don’t burn.

Serve hot with a delicious rocket, Parmesan and avocado salad.
