Delaire Graff Shiraz 2015 & Dianne Bibby’s Roast leg of lamb with sweet onion marmalade – 16.05.2017

Delaire Graff Shiraz 2015

Morné Vrey, the winemaker at Delaire Graff Estate at the top of the Helshoogte Pass in the Stellenbosch Wine Appellation, not only has his own grapes to use in winemaking, but also those of contracted vineyards which are nursed by the Delaire viticulturist, Kallie Fernhout.

So, the grapes for the Delaire Graff Shiraz 2015 come from a selection of hand harvested grapes from cool site vineyards in the Stellenbosch Appellation. Once in the cellar, fermentation took place at cool temperatures in order to ensure retention of the fresh fruit aromas and flavours.  Maturation took place over a year in prefilled French oak barrels. The wine was then prepared for bottling.

Michael Deg, Chef at Delaire Graff Restaurant

It looks like
Packed under screw cap in a Burgundy shaped bottle in an elegant black livery. In the glass, the wine is a deep purple plum at the core which pales out to a youthful garnet at the edges.

It smells like
A generosity of youthful fruit, mulberries, plums and roadside brambles. There is a grind of white pepper in there and an undertow of oak and its concomitant spices.

Virgil Kahn, Chef at Indochine on the Delaire Graff Estate

It tastes like
Accessible even in its youth.  The wine is packed with sappy fruit, presenting a soft smooth palate with the tannins and acidity well interwoven into the aftertaste which has a hint of charcuterie savouriness.

It’s good with
Both Michael Deg of the Delaire Graff Restaurant and Virgil Kahn of Indochine, also on the estate, have any number of dishes which go well with this delicious Shiraz.  It is the sort of wine you could drink before a meal waiting for the braai fire to settle down, or with a sublime winter casserole. It would well match a platter of charcuterie and cheeses with artisanal breads. However, if you want to give it the respect it is due, match it with Dianne Bibby’s Roast leg of lamb with sweet onion marmalade. Click here for her recipe.
