1 head of cauliflower, trimmed and roughly chopped
4 medium potatoes, peeled and cubed
250ml single cream
1 litre hot water
2 tbsp NoMU Chicken Fond
2 tbsp butter, cubed
NoMU Sea Salt
2 shallots, thinly sliced
2 tbsp NoMU Extra Virgin Olive Oil
6 x 200g firm white fish fillets, or angel fish, salmon or trout, skin on
olive oil, for brushing
Place the cauliflower, potatoes, single cream, hot water and Chicken Fond in a large saucepan over a high heat and bring to the boil. Reduce heat, cover and allow to simmer for 30 minutes or until tender. Remove the cauliflower and potatoes and put in a food processor with enough of the cooking liquid (approximately 60ml) to create a smooth but not overly soft purée. Add the butter, season and blitz again. Set aside and keep warm.
Fry the shallots in the olive oil until crispy and set aside. Bring the extra butter to the boil in a saucepan until it starts to brown. Remove from the heat and stir in the crispy shallots and fresh thyme.
Brush the fish fillets with olive oil and season with salt. Heat a heavy-based non-stick pan over high heat and place the fish, skin side down, in the hot pan. Cook for about 4 minutes or until crispy and golden brown. Using a spatula, carefully turn the fish and cook on the other side for a few minutes, until the fish is cooked through.
Serve the fish, crispy skin side up, on the cauliflower potato purée, topped with caramelised shallots and drizzled with thyme butter.
