Chicken with bacon & baby tomatoes
Quite often Madeleine will play in the kitchen with what we have in the fridge. The result is usually a once off and always delicious. And I find a suitable wine, this time the Constantia Royale Sauvignon Blanc 2016.
We love using the Willow Creek Extra Virgin Olive Oils, especially the flavour infused versions to round out the flavours of our dishes.
What you’ll need
2 x 400gm packs of chicken mini breast fillets cut into nuggets
Willow Creek Garlic Infused Extra Virgin Olive Oil
Willow Creek Lemon Infused Extra Virgin Olive Oil
250g streaky bacon cut into strips
2 large onions sliced
1 410gm tin Whole Baby Tomatoes
sea salt and freshly milled black pepper
What you’ll do
In a large wok quickly stir-fry the chicken pieces until light brown on the outside but not cooked through. Set aside.
Wipe out the wok, add a little of the oils and stir-fry the bacon until crisp, drain on kitchen paper.
Wipe out the wok, add a little of the oils and stir-fry the onion until golden brown, drain and set aside.
Wipe out the wok and add to it add the chicken, onions, bacon, the tin of tomatoes and bring to a slow boil, turn down the heat and simmer gently for about 10 minutes. Add the cream and season with the salt and freshly milled black pepper.
Serve with rice or noodles and a green salad.

Made by Roger Burton, grapes from the 16 ha of vineyard on Nova Zonnestraal Estate, one of the newer entries to the Constantia Wine Appellation. The most perfect food wine. Classical bright Sauvignon fruits, crisp starfruit, ripe sappy kiwi and sweet tropical lime. Lovely single thread running through from entry to aftertaste. Perfect balance on either side of it.
Refreshing, appetite awakening, zippy, complementary to a good dish, well cooked. Excellent step up from the 2015, awarded a worthy 4 and a half stars in Platters Guide.
