Anna & Roberta Montali are always on the cutting edge of what is happening in food in South Africa. Here is their contribution to the current low carb lifestyle. I would make this even if I was not on a low carb eating plan. Classical Montali, looks great, smells amazing and tastes oh-so-yummy.
Prepping And Cooking Time: 40 minutes
1 head of cauliflower
250ml mozzarella, grated
1 large egg, lightly beaten
1 garlic clove, finely chopped
10ml (2 tsp) dry oregano
10ml (2 tsp) dry sage
30ml (2 tbsp) fresh flat-leaf parsley, chopped
Olive oil for drizzling
180ml whole peeled tomato
5ml (1 tsp) dry oregano
Salt, to taste
15ml (1 tbsp) olive oil
150g mozzarella, grated
100g button mushrooms, sliced
Preheat the oven to 180°C.
Remove the florets from the head of cauliflower and place in a food processor. Process until finely ground. Microwave for 8 minutes.
Put 250ml (1 cup) of the cauliflower in a mixing bowl and add the mozzarella, egg, garlic and herbs.
Divide the mixture in half and using your hands pat into 2 lightly oiled round baking trays. Brush with the oil and bake until done, for about 15 minutes.
Mix together the tomato, oregano, salt and oil.
Remove the pizza bases from the oven. Turn the oven to grill.
Spread the tomato mixture over the bases, sprinkle with the cheese and top with the mozzarella, mushrooms and capers.
Place under the grill and grill until the cheese has melted, about 3 minutes. Serve with a fresh green crispy salad.
