The rolling hills of Polkadraai in the western reaches of the Stellenbosch Wine Appellation are home to the Asara Wine Estate and Luxury Hotel. Here in a 16-year-old vineyard overlooking one of the farm dams is where the bulk of Asara’s Cabernet Sauvignon Vines grows in a mix of Oakleaf and Tukulu soils. Benefitting not only from cooling breezes from False Bay, some 15 kilometres away but also from sunlight reflection from the dam which results, from the breezes a longer hang time for ripening and richer colours and flavours from the sunlight reflections. The second vineyard is planted in mainly in Tukulu soils.
The grapes for the Asara Vineyard Collection Cabernet Sauvignon 2015 are harvested into small lug boxes and taken to the cellar and chilled, destemmed and crushed and then allowed three days of cold maceration before fermentation. Once pressed the wine then undergoes malolactic fermentation in the tank. It is then allowed to settle and taken for 18 months to 225 litre French oak barrels, of which 10% were new and the balance previous fills. The wine is then prepared for bottling.
From a Bordeaux shaped bottle, closed under natural cork. The label indicates that the wine is part of the Estate’s Vineyard Collection, is elegant and descriptive. In the glass, the wine is bloodplum red at the heart which pales out to ruby garnet at the edges. The aromas are all Cabernet, Blackcurrants, Crème de Cassis, oak and its concomitant spice and vanilla and Morello cherries. These carry over on to the generous medium weight palate where the soft tannins, the full fruit, well applied oak and a thread of acidity runs through onto the long aftertaste. If cool cellared, the wine is certainly good for another 6 to 8 years.
Asara Luxury Hotel offers excellent food choices in the Sansibar Bistro where the Gin Bar, the biggest selection in the country will provide an aperitif before your meal.
