Where did you train as a chef?
Capsicum Culinary Institute Cape Town.

What do you like to eat most?
Mostly I love eating Burgers or pizzas. 

What’s your least Favourite Food?
Although I like to try any food put in front of me, I do not eat Offal at all.

Do you have a childhood, or Mom food memory?
Sweet corn meatballs with béchamel and rice – my favourite mom dish

What is your morning routine?
Sleep as late as I possibly can, snoozing the alarm at least once. Feed my dog Lucy while making coffee for the road.

From where do you draw your inspiration?
I draw my inspiration from different colours and textures. I try to be as creative as possible while adding an artsy element to every dish.

What’s your Favourite Dish you are cooking now?
Our Pork dish. It consists of Pork belly, minted mash, carrot puree, exotic mushrooms, crackling, truffle hazelnuts and pork jus. It is a colourful dish with lots different textures and flavours.

Whisk, tongs, mixer, spatula

What is your ideal neighbourhood eatery?
As long as there is good food, drinks and music, it is ideal for me, like Saints Burger Joint for example.

Always in your fridge at home?
Butter, Cheese, Spur salad and fries sauce, Coffee, Beer

Name some food items you would take to a Desert Island?
Coconut milk, Cucumber, Salmon, Avocado, Dark Chocolate, Beer & Whiskey

What is your Desert-Island Disc?
Sharped dressed man – ZZ Top

Saturday night after service tipple?
Jack Daniels poured over 3 blocks of ice with a splash of water or an ice cold Castle light draught.

Guests not showing up for their bookings without any notice or showing up extremely late.

Your key Wardrobe Item?
Black Jeans and a comfortable hoodie.

Talent you would like to have?
Playing a musical instrument.  Guitar and Piano.

People who work extremely slow drives me crazy.

Planning for a new menu never stops and I am constantly working on new dishes and plating ideas.

Going away somewhere in the middle of nowhere with friends, having a braai, drinking Whiskey with music playing in the background.

Guilty Pleasures?
My hair and tattoos. I love trying different colours and giving my hairdresser and tattoo artists free reign to get creative.

One day, I will….
See my natural hair colour again…maybe.
