I am of the school of thought that there is no special time for a glass of wine or the best time to open a bottle of bubbly. Any time is wine o’clock.

I remember spending a weekend with friends in Witsand and I had taken a bottle of sweet German Riesling which we did not use, then our host took it out at breakfast time and we had it with our eggs and bacon.  What a fabulous idea and one I have never forgotten.

And so it should be with this stunning Steenberg 1682 Pinot Noir MCC 2015. MCC, or Cap Classique, as it is commonly known, is made in the traditional Champagne method using a second fermentation in the bottle, creating a unique mini expression of the estate’s Pinot Noir and the growing conditions of the vintage.

The grapes for a low alcohol level base wine are hand harvested and low sugar levels – the second fermentation adds more alcohol.  The juice before fermentation is a gentle pale pink in colour and ha the classical Pinot Noir berry flavours, strawberries and tart red cherries.

The second fermentation returns the carbon dioxide to the wine in the form of the tiniest bubbles when the wine is opened.  After bottle fermentation, the wine lay on its lees in the bottle for a year before disgorgement and being prepared for the market.

It looks like
Classical Champagne bottle with gold foil and a charming pink label. In the glass a charming lotus flower pink with a myriad of the tiniest bubbles rushing helter skelter to form a crown o the rim of the glass.

It smells like
Fraises des bois, crunchy almond biscotti.

It tastes like
Refreshing, zesty, flavours of red berries and a hint of sliced red apple and pink grapefruit. Generous mouthful crisp and fresh through to the aftertaste which lingers and then slowly wanes.
